Nugs, chips, and homemade vegan garlic mayo dip


Feel-good meal by Rachel.

Ingredients:

Vegan nuggets 
Baby plum tomatoes

Spring onion

Gherkins

Bodkin's white cabbage

Cucumber

Iceberg

Pickled red cabbage

Garlic Mayo Ingredients:

Basic mayo - blend with a stick blender -

6 tbsp aquafaba (I used cannelini liquid and it worked perfectly)

3 tbsp apple cider vinegar

1 tbsp white wine vinegar

2 tsp mild mustard

salt, pepper and 250ml light oil.

 

 

Method:

Prepare the vegan nuggets and french fries as per packing instructions. Wash and cut the veggies. Place everything on a plate and use Bodkin's as a side dish.

To prepare the mayo, add all the ingredients together and mix it using stick blender. If desired, add garlic, chives and black pepper on top. Enjoy!
